Sushi Daily

Sushi Daily is a kiosk-based fresh-sushi concept operated under the French KellyDeli group. Instead of standalone restaurants, its small open kiosks sit inside supermarkets, grocery hypermarkets and travel hubs, where trained sushi artisans hand-prepare maki, nigiri and poke in full view of shoppers and sell it the same day. The distinctive hook is theatre and freshness: customers watch the craft happen and the food rides on the host store's existing footfall rather than needing its own destination pull.

This is a partner-franchise system that actively recruits operators to run individual kiosks. The franchisor secures and negotiates the retail-host locations, finances the construction work on the kiosk, supplies the recipes and a standardised product range, runs the supply chain for fish and ingredients, and provides the brand, marketing and quality systems. The operator (partner) invests in equipment, company setup and franchise fees, completes a structured multi-week induction covering both theory and hands-on artisan technique, hygiene, logistics and management, then runs the kiosk day to day — staffing, daily preparation to standard, hygiene, stock, local execution and customer engagement. They are supported by regional and central teams for partnership, supply-chain, quality, marketing and operations.

The operator earns from in-store and grab-and-go sushi sales generated by the host retailer's traffic, paying franchise and partnership fees and operating within the brand's pricing and product framework. Profitability hinges on daily volume, the labour efficiency of skilled artisans, freshness-driven waste control and the quality of the host location. The main costs are the kiosk equipment, company setup, entry fees and the daily wage cost of skilled preparation. The brand operates primarily in Western and Northern Europe; it currently has no kiosks in Czechia or Slovakia and does not offer a local licence there, so negotiations are handled through the foreign head office.
